The almond paste is one of the most famous Sicilian products in the world. Becomes part of the products of the Italian tradition , this particular food has centuries of history behind it and, even today, it is one of the most used and well-known products in the Sicilian gastronomy sector.
We use our homemade Almond Paste to create different products, from classic desserts to those flavored with Sicilian citrus fruits.
In addition, we use the same Almond Paste for the production of the typical Frutta Martorana , which takes its name from the Benedictine convent of Palermo dating back to 1193 and where the Benedictine nuns already produced these sweets at the time of the Feast of All Saints.
There are many traditional Sicilian biscuits , each of which finds its own history over time. Like Lenten Cookies , made with almond paste and free of butter, milk and eggs, to respect the ban on eating animal fats in the 40 days of Lent. Le Cassatelle , a biscuit filled with dried figs and decorated with carvings and icing. An ancient tradition that has been handed down for generations, a reminder of the grandmothers who prepared "cassateddri" in the wood oven. The Taralli , soft and fragrant, typical for the holidays of the dead. And yet the Tetù , also called Catalani, which contain a mixture of many products such as almonds and candied fruit, covered with chocolate or lemon glaze.
